Coconut Rum Soaked Pineapple

Did you know that the Pineapple is a Universal Symbol for Hospitality?

That’s an exact fit for these Coconut Rum Soaked Pineapple Tidbits.  How much more Hospitable can a person get when they serve a bowlful of alcohol soaked fruit to their guests? Not much…..


It’s a favorite of mine & I’ve been wanting to share this on my blog for a while.  Thanks to a friend with a fresh pineapple in her refrigerator & a spur of the moment plan, I was able to post this recipe sooner than expected.  Oh boy, it tasted really good.  The Coconut Rum Flavor just seeps right into the pineapple.  Needless to say, we ate the whole thing!

What a great way to spend an afternoon, Nibbling on Pineapple, sharing stories & laughing…..lots of laughing.  Laughter is good for the Soul.  I highly recommend it…..Lets call it “Pineapple Therapy”

 

 

Coconut Rum Soaked Pineapple

Ingredients

  • 16 ounces (1 Pint)Coconut Rum
  • 1Fresh Pineapple, peeled & cored

Instructions

  1. Cut Pineapple into bite size chunks. Place in medium bowl & Pour Coconut Rum over Pineapple. Cover & Refrigerate approx. 24 hours. Drain, reserving Rum. Serve pineapple in tropical flavored cocktails or as an alcoholic appetizer. The reserved Rum can be served alone or with additional Pineapple Juice.

    I make these too! Sometimes I do a combo of coconut rum, vanilla vodka, and banana vodka. Oh so yummy!!! The other thing I do is freeze them after they've marinated. It's perfect for dropping a chunk or two, or three, or four in a drink. 🙂

    I would think so…the canned pineapple might not be quite as firm after soaking, but it should be just as tasty. 🙂 Hope this is helpful.

    doesn’t need to be refrigerated and how long will it last. Can you keep it in the drawer in a cool place.
