{CopyCat} Girl Scout Thin Mint Cookies

I could start with a long-winded story about how these minty buggers were a childhood favorite.  And with every last bite, I’m forever transported back to the days when cookies took me to  la-la land on a vividly minty green cloud fluffed with happiness.

Well, it’s sorta like that.

Now days, I get the same euphoria not only from good recipes, but from the ease of preparation. So simple.  Just toss the chocolate in the slow cooker (if you’re a good shot, you could literally practice your nothin’ but net maneuver from across the kitchen). Melt on low for an hour and dip your crackers in the chocolate.  That’s it.  These thin mint cookies taste like the real thing.  No kidding.  Don’t let the ritz cracker thing fool ya……

Made in slow cooker…pure heaven, on a cracker.
