Slow Cooker Lemony Raspberry Lava Cake

Sometimes my cravings stray a little north of the usual chocolate on top of chocolate, with a side of something chocolatey.

Enter Mr. (or Mrs.) Lemon….

Before I go any further, it should be pointed out that this recipe requires a mini story.

Back in the day, my mother in law owned a bakery and my favorite donut to sneak out of the display case was lemon filled and lightly sprinkled with powdered sugar.  My second favorite filled donut was raspberry, topped with the perfect dab of homemade vanilla icing.

So I guess my sweet tooth got a tad nostalgic the other day.

Which caused a slow cooker inspired concoction.

I found a box of lemon cake mix and lemon pudding in my pantry and the rest is history.

Slow Cooker Lemony Raspberry Lava Cake

Ingredients

  • 1 Box Lemon Supreme Cake Mix
  • Water,Oil, Eggs (as directed on cake mix box)
  • 1 Box Lemon Pudding (instant, 4 serving size)
  • 2 Cups Milk
  • 1 Cup Frozen Raspberries
  • 1 Cup White Chocolate Chips

Instructions

  1. Prepare cake batter according to instructions on box. Pour batter into 4 quart slow cooker. Next, mix pudding with 2 cups milk. Whisk until smooth. Pour pudding mixture on top of the cake batter. DO NOT MIX. Top with frozen raspberries, then sprinkle with white chocolate chips. Cook on low for approximately 4 hours, or until cake begins to bubble in center. Center will be soft (like lava!). Serve warm with whipped topping or vanilla ice cream.

My Gooseberry Patch Slow Cooker Apple Pie

Goals.
It has always been a goal of mine to have one of my recipes selected to be featured in a Gooseberry Patch Cookbook.
I’ve been a fan of Gooseberry Cookbooks for a very long time.  I think the biggest reason I like them so much is that the recipes in their cookbooks are from regular people who want to share their tried and true family favorites with other people, like you and me.  
Well, last fall it happened.
My recipe for Slow Cooker Apple Pie was chosen!

This recipe is a real keeper.

Seriously though….If you like pumpkin spice-y flavored goodies, then you’ll love this hot cocoa.
One sip & you’ll be saying :
 JEEZ LOUISE, This is good!
 My kids even really like it….And they don’t lie when it comes to trying new kinds of food.
 Basically, if they don’t like it- they DON’T eat it.
Plain & Simple.
 They cut right to the chase.  No messing around trying that whole “spare Mom’s feelings” bit.
 Brutally honest, I tell ya.
That reminds me of a comment my daughter blurted out the other day when I was trying on my new Eddie Bauer “Mom Jeans”.  She took one look at them on me and said ” Mom. Those jeans make your junk look like the back end of an SUV.”

Slow Cooker Pumpkin Hot Cocoa
Slow Cooker Creamy Pumpkin Hot Cocoa

Ingredients

  • 5 Cups Skim Milk Print Recipe
  • 2/3 Cup Hot Chocolate Mix
  • 1/2 Cup Pumpkin Puree
  • 2 teaspoons Pumpkin Pie Spice
  • 1 teaspoon Vanilla
  • Pinch of Salt

Instructions

  1. Whisk All ingredients in a 4 quart Slow Cooker. Cook on Low for 2 hours, stirring occasionally. * Some pumpkin may settle to the bottom, lightly wisk before serving. Top with a great big dollop of Whipped Cream. Makes 6 small servings, or 4 large.

Slow Cooker Caramel Pumpkin Pie

Caramel, Pumpkin, and a Slow cooker.

 There is not a single reason that these three things won’t take you to your happy place….. you know, the space in your mind where the dishes are spotless, your kids smile all day long and your acid wash jeans from high school still fit.
                   WE ROCKED THOSE JEANS…DIDN’T WE GIRLS!?
So gather up everything you need, (you should have all these basic ingredient in your cupboard right now) pour it into the slow cooker, and prepare for your visit to the land of make-believe.
Well, at least you can indulge in your caramel and pumpkin fantasy anyway….

Slow Cooker Caramel Pumpkin Pie

Ingredients

  • 1- 15 Ounce Can Packed Solid Pumpkin
  • 1- 12 Ounce Can Evaporated Milk
  • 3/4 Cup Sugar
  • 1/2 Cup Bisquick Baking Mix
  • 2 Eggs, beaten
  • 2 Tablespoons butter, melted
  • 2 1/2 teaspoons Pumpkin Pie Spice
  • 2 teaspoons Vanilla
  • 1/4 Cup (or more, if desired) Caramel ice cream topping

Instructions

  1. Mix together all ingredients except caramel ice cream topping in large bowl. Place in well sprayed 4 quart slow cooker. Cover and cook on low for approx. 6 hours or until thermometer reads 160 degrees. Pour caramel ice cream topping over cooked pie in slow cooker. Serve with whipped cream, additional caramel drizzle and optional pecans.

Slow Cooker {Country Harvest} Applesauce

 
 
 
I had a bag of apples and notion for somethin’ sweet the other day.
 
 
 
OH, And a thousand other things I should be doing besides making applesauce……
 
 
Oh well. 
 
After hunting down my recipe for Slow Cooker Applesauce;  It only took me forever and a day to find, seriously…..
 (So glad it’s on my blog now,  sooo much easier to locate. Tee hee)
 
I then recruited my somewhat willing daughter, a handy apple slicer, and my trusty slow cooker…..
 
 
 
 
 
 
BEHOLD!
 

So yummy.  It tastes like apple pie!
The kids & my manly man gobbled it down so fast that it was gone before I could get more than a spoonful to taste.  I am one sad momma.  I’ll have to make a double batch next time.

                Slow Cooker Applesauce                          Print Recipe

3 Pounds of Apples  (how many cups?  check out this equivalent chart )
1/2 Cup Brown Sugar
1 teaspoon Cinnamon
1 1/2 teaspoons Lemon Juice

Peel, core, and chop apples. Place in 4 quart slow cooker.  Add the remaining ingredients and stir until apple pieces are well coated.  Cook on Low for approx. 4 hours, stirring occasionally. (Cooking time may vary depending upon what type of apple you use: I cooked a softer variety, harder apples could take longer)
