Ingredients:
– Hazelnut Crust:
– ½ cup Nature’s Garden Roasted Hazelnuts
– ¼ cup coconut flour
– ⅛ teaspoon salt
– ¼ teaspoon baking soda
– ½ teaspoon vanilla extract
– ⅓ cup butter or ghee, melted
– ⅓ – ½ cup maple syrup
– ½ teaspoon cinnamon
– Egg replacer equivalent to two eggs (optional)
Preparation:
To make the hazelnut crust, preheat your oven to 350 degrees Fahrenheit. Grind the hazelnuts in a food processor until they turn into course flour. Add salt and baking soda and pulse for another second or so to combine everything well. Transfer this mixture into a mixing bowl and add vanilla extract, butter/ghee, maple syrup and cinnamon – mix with an electric mixer until it all comes together like dough; if needed you can add more liquid (maple syrup). If using egg replacement, beat two of those now before adding them. Grease your pie pan with coconut oil spray or whatever works best for you – or line it with parchment paper. Press the crust into the pan, making an even layer on top and bottom – if needed you can use a flat-bottom object like a measuring cup to help pack everything down well; be gentle so as not to crack your crust though!
Bake for about 20 minutes or until golden brown on top (you may want to transfer onto a wire rack at this point). Set aside and let cool completely before filling. Raise oven temperature back up to 350 degrees Fahrenheit.
To prepare apple pie filling: Grate one lemon’s worth of zest first then juice the whole thing over a small bowl – set that aside, we’ll need some later. Peel, core, and slice two apples thinly into eights lengthwise (or whatever thickness you prefer). In a mixing bowl, combine apples with lemon juice and zest as well as maple syrup, cinnamon, and nutmeg. Toss to coat evenly then transfer into the cooled crust – pack down gently but firmly! Bake for 15-20 minutes or until set up on top; let cool before slicing and serving. You can serve this either warm or cold – both ways taste delicious!
