Cover and cook for 5 min and with the help of potato masher mash the beans until you get the desired consistency. Now, season with lime and cheese and your ready to go.

Everyone has rice at home, which makes this dish one of the best alternatives for dinner during self-isolation. It’s incredibly easy to make and you can add any vegetables available in the kitchen.

Take a skillet, heat vegetable oil over medium heat. Pour a cup of rice and cook until its light brown. It gives the rice a toasted fragrance and enhances the taste. Now, add chicken broth, onion, garlic, tomato sauce, cumin, salt, and boil. Lower the heat, cover and let it cook for 30 mins. Cook up any vegetables you would like to add, while the rice is cooking. Once the rice is cooked sprinkle, some Mexican shredded cheese and let the cheese blend into the rice for 5 mins before serving.

The classic Mexican street food topped with cheese and chili-lime mayo, this isa delicious and fun way to enjoy corn.

You can easily make Mexican corn at home. First, wash the corn husk thoroughly—heat a grill and then grill the corn for around 10 min. For mayonnaise, add lime juice, salt, smoked paprika, mayo to a bowl, then whisk them properly, until combined. Lastly, brush the corn with butter, sprinkle some cheese and cover it with mayo paste.
